Palacinky

This is the recipe I used to create palacinky when I was growing up. These are pancakes, but they're not as fluffy as your typical American-style pancake. Om nom nom delicious!

2 eggs, well beaten

1 1/2 cups milk

1 1/2 cups flour

2 1/2 teaspoons baking powder

1 tablespoon butter, melted

1 teaspoon vanilla

pinch of salt

Sift flour, baking powder, and salt. Add well beaten eggs and milk. Beat until very smooth. Stir in melted butter and lastly vanilla. Have griddle on and put in about two tablespoons of above mixture. Brown both sides. Serve with jelly, jam, or pancake syrup.
